This is a really lovely dish to prepare for a potluck. It brings so much color to the table! Like many people, I was not a huge fan of beets as a child. I grew up in Pennsylvania Dutch Country. Beets were used to pickle hard boiled eggs. My mom loved those and beets in all forms, for that matter, and I simply didn't get it. To this day, beets only really do it for me if they have been prepared in the right way.
This salad is one of the ways that I love beets. The lemon and balsamic offset the sweetness of the beets and gives them a tangy flavor. The mint and basil add a new layer of flavor. I hope you try this and it brings out the joy of beets for you!

- 6 medium beets
- 2 tablespoons of fresh chopped mint
- 3 tablespoons of fresh chopped basil
- 3 tablespoons of lemon juice
- 1/3 cup of olive oil
- splash of balsamic vinaigrette
- salt and black pepper to taste
